“It was the first time I had nuts as cheese in a pasta. I remember having a sardine pasta with pistachio that had this fattiness. I do that a lot now.”
“It has a beautiful wildness that’s hard to come across elsewhere. It feels untapped and full of potential. The food is great, and there are so many wonderful farms and producers. And it’s quiet, really peaceful, and there’s never any traffic.”
